RHUBARB RECIPES

Spicy Rhubarb Cake

  • 1/3 cup - Boiling Water
  • 2 cups - Chopped Rhubarb
  • 2 cups - All Purpose Flour
  • 1 1/2 cups - Sugar
  • 1 1/4 tsp - Baking Soda
  • 1 tsp - Salt
  • 1 tsp - Ground Cinnamon
  • 1 tsp - Ground Nutmeg
  • 1 tsp - Ground Cloves
  • 1/2 cup - Vegetable Oil
  • 3 - Eggs
  • 1 tsp - Vanilla Extract
  • 1 cup - Chopped Nuts

Pour boiling water on rhubarb in large mixing bowl. Grease and flour 13"x19"x2" pan. Beat rhubarb and remaining ingredients on low speed, 1 minute, then beat on medium speed, 2 minutes. Pour into pan. Bake at 350 degrees 45-50 minutes; cool and frost with favorite frosting.
