• 3 – Large Eggs
• 3/4 to 1 1/4 cups – Sugar (depending on sweetness of potatoes)
• 1/4 tsp – Salt
• 1 tsp – Ground Cinnamon
• 1/2 tsp – Allspice
• 1/4 tsp – Ground Nutmeg
• 1 cup – Heavy Cream
• 3 cups – Sweet Potatoes, Cooked and Mashed
• 1 – Unbaked 10″ Pie Shell

Beat eggs well. Add sugar, salt, and spices and mix thoroughly. Add cream and stir. Add mashed potatoes and mix thoroughly. Turn into unbaked pie shell and bake in preheated 350 degree oven for 1 hour, or until firm.
